What I Had for Dinner Tonight

Tonight I was very limited on ingredients because we have to get to the grocery store, so I looked in my pantry to see what staples I had. I had a can of olives and two cans of garbonzo beans. We always keep those things on had for those rainy days and today we actually had some rain.

With a few simple ingredients, I was able to pull together a healthy meal in about 15 minutes. Once I tasted I made sure to write down the recipe because it was delicious.

A Very Simple Garbonzo Bean Salad

Ingredients

2 15 oz cans of garbanzo beans

1 15 oz can of black olives

1/4 cup red onion

2 tbsp of olive oil

2 tsp of granulated garlic

1 tbsp of basil

2 tbsp of nutritional yeast

2 tsp balsamic vinegar

Instructions:

Drains beans and olive, rinse with cold water. Place in bowl, add other ingredients and mix well. Let chill for one hour or eat right away.

Variations: Add grape tomatoes, capers, or try some fresh garlic (about 1 or 2 cloves) in place of the granulated version. Goes great with brushetta spread over toast.
