Introducing Vegan Quick Meals

I want to introduce a new category. Each week I will introduce a Vegan Quick Meal. This meal can be created with about 5-7 ingredients (not including cooking oil that may be used) and will take less than 30 minutes to cook.

This will help out those of us with a busy schedule and kids who want it right away. Or if you are single and hate to shop for a lot of groceries, then this is the spot for you.

This week’s Quick Fix was one that I pulled together the other day when we were all very hungry from a day of errand running.

Ingredients

  • 3 Cans Hormel Vegetarian Chili
  • 1 onion chopped
  • 1 bell pepper chopped
  • 1 stalk celery chopped
  • 3 clove garlic chopped
  • 1 tbsp cumin
  • 1 bag tortilla chips

Cooking Oil: 2 tbsp Coconut Oil

Prep Time: 10 minutes Cooking Time: 10 minutes

Directions

Heat pot and add 2 tbls coconut oil. Add onions, garlic, celery, and bell peppers. Stir and coat well. Cook for 5 minutes. Open and add chili and cool on low for 5 more minutes or until heater through.

Place Tortilla chips in bowls, top with chili and enjoy.

You get a full flavor chili with vegetables that are no over cooked and still have crunch. The kids will love it. This is a great dish to prepare for sleepovers, sports parties, a night with the girls, or to just watch you favorite flick on the tele.
