Vegan Adventures in Los Angeles Part 4

On Monday I cooked for a few friends. We had a mexican fiesta. Cactus and Chayote squash tacos, refried beans, and spanish rice.
I wasn’t sure how they would take to the cactus. Not that it is nasty, but sometimes people are so not into anything different.
Most of the people there were used to ground beef tacos and fattening refried beans. My recipes are very low in fat and have no meat at all. So I had some skeptics.
The intitial reaction from most was that they did not want to try it. However as the smells from the kitchen hit their noses, they started finding their way into the kitchen asking all sorts of questions about cactus, making refried beans without meat fat, and more. I was not only busy cooking, but I was busy talking as well.
Once the food was done, I was curious to see how people would take to it. To my surprise the children were the first to dig in. Must have been hunger.
The grown folk took small portions at first. I was getting angry because I had made a lot of food and spent a great deal of time doing it.
Then I noticed a trend.
As one person finished their meal they would get up almost in a sly manner and make a comment under their breath about the food. Then they made their way to the table and proceeded to make another plate. Then the next person would do almost the same.
It was hilarious!
After about an hour all the food was gone and I had no leftovers to deal with.
I found myself giving out recipes, the website address, and even more information on veganism. I was even invited to cook again this coming weekend.
Now that invite I need to think about

LaTara, I have to admit that I would be soooo hesitant about Cactus! But it sounds like you really won them over there!

I’m seen cactus in some Hispanic owned grocery store, but i’ve never tried it myself. What does it actually taste like?

Cactus has a sort of bell pepper taste with a bit of a bite. I mix it with chayote squash, tomatillos, garlic, onion, and tomato paste.
