Udon Noodle Stir Fry

This was one of the dishes I created while I was in Oklahoma. It is quick, full of protien from the tofu, and rather tasty.

Ingredients

*1 package Udon noodles (Use all three sacks in the bag – Most packages come with three noodle sacks)

1 Green Bell Pepper chopped

1 Onion sliced

2 Cloves Garlic sliced or chopped

1 package firm or extra firm tofu cut lengthwsie

3 tbsp sesame oil

2 tbsp soy sauce or magi

1 tbsp basil

*As a note we do not suggest that you use the seasoning packets that come with the Udon noodles. We do, however, suggest the dried vegetable packets.

Directions

Cook Udon noodles only according to instructions. Once they are done, drain and stir in all three vegetable packets. Set aside noodles.

In a deep frying pan add 2 tbsp sesame oil. Add tofu and season with basil and 1 tbsp soy sauce or magi. Cook tofu on medium to high heat until tofu begins to brown.

Add onions, bell peppers, and garlic tofu. Stir fry on high for 5 minutes or unitl veggies begin to change in color. Add noodles and the remaining sesame oil and soy sauce or magi.

Variations:

You can add any vegetable to this stir fry. Also try the Morning Star chicken or beef slices instead of tofu.
