Twisted Cole Slaw

In our household we enjoy making a recipe really sing! So it is no wonder we have jazzed up the traditional cole slaw and gave it a little zing.

Ingredients:

1 bag cole slaw mix
1 cup of golden raisins
3 tbsp cashew nuts
1/2 cup vegan mayonnaise
2 tbsp tahini
1/4 tsp celery seed
2 tbsp cider vinegar
1 tbsp organic sugar
1 tbsp soy sauce
Sea Salt to taste

Directions:

Put tahini, mayonnaise, sugar, and a little salt into a bowl. Add hot water a little at a time, stirring until you get a nice thick dressing consistency – neither too runny nor too stiff. Stir in the cider vinegar. Sometimes when you add the cider vinegar it curdles. Don’t worry. Just keep stirring, and it will blend together.

Add the cabbage, carrot, raisins, and pineapple. Stir well making sure to evenly coat.
Dry fry the cashews and celery seeds in a pan over a high heat until browning begins to occur. Shake in the soy sauce, and continue to stir as it evaporates.

Add nuts to cole slaw mixture and stir.

Refrigerate for 2 hours or until time to serve. If coleslaw becomes dry just add more mayonnaise and a little sugar.

Variations: Add green onions, pineapples, or other nuts.
