Rupert created a recipe last month that I have him make almost weekly. When I tasted the dish I told him all we needed were some tortilla shells and making for tacos.
You will love these tofu tacos.
Ingredients
16 oz frozen tofu thawed, drained, and finely minced
3 tbls chili powder
7 cloves of garlic minced
1 regular onion chopped
1 tsp cumin
2 tbls soy butter
1 1/2 tbls liquid magi
2 tbls coconut oil
sea salt to taste
1/4 tsp cayenne pepper (optional)
Directions
Heat pan on medium heat. Add butter and coconut oil and allow them to melt. Add tofu, onions, and garlic. Fold in cumin and chili powder while stirring. Add magi. Cook for 10 under medium to high heat turning frequently. Add sea salt to taste.
Heat your tortilla shells, taco fixings, and enjoy!
Variations: Add fresh cilantro to the tofu mix as soon as you turn the fire off.
