Tofu Facts
Soy is a great product and tofu is one of the most popular forms of the million dollar bean.
Tofu is a very versatile food and can be used in so many dishes. Not only is it versatile but it is very nutritious as well.
The texture of tofu varies depending on the type and firmness of it. You can purchase tofu in silken, soft, firm, and extra firm. Each is used for different purposes. I use the silken or soft and firm texture together for my tofu cheesecakes. Rupert makes miso soup and uses the soft version of tofu.
Another thing to look for is where the tofu is from. Japanese tofu is not as firm as chinese and to me it is better in deserts.
One last thing. You should never pay over a dollar for tofu, unless it is a special kind that has already been prepared. The best place to shop for tofu is in your local Asian town or even at Sam’s Club or Costco’s.
