<p>When I first started trying out the vegan diet, I would only stick to the same foods I was familiar with, without knowing that I was limiting myself to the huge possibilities you can get from experimenting with so many different classes of vegan foods.</p>
<p>Remember that there is a huge spectrum of vegetables, nuts, oils, beans, wheat and fruits that you haven&#8217;t tried so always keep an open mind when you are at the market to try new things. Also remember that each vegetable or fruit has its own unique amazing properties, so if you want to get all the nutrients each vegan food offers, you need to try them all.</p>
<p>Here are some of the new discoveries I have made that have change my vegan lifestyle when I put them into my diet.</p>
<p>Lucuma &#8211; This fruit is native to the cool highlands of Peru. It has great nutritional values and It was considered by the Incas as the &#8220;great fruit&#8221; or &#8220;Gold of the Incas&#8221;. If you are interested in trying out this fruit, luckily for us its becoming more popular and you can find them in Hispanic markets. Now I still haven&#8217;t found the actual fruit but I have found the frozen pulp, which makes an awesome smoothie when use with soy milk.</p>
<p>Camu Camu &#8211; Another fruit from the amazon rainforest, this fruit is gaining more popularity for having the highest concentration of vitamin C in a fruit. This fruit is actually very famous in Japan for its powerful anti-depressant quality. This fruit is getting more exposure in the markets but right now I have only found this in juice or as a supplement.</p>
<p>Flax Seed Oil &#8211; This oil is a must for your diet. Flax seed oil has one of the greatest concentrations of omega 3 essential fatty acids which are a essential for a good health. Try this on your salads to add a unique flavor.</p>
<p>Like these, there are still hundreds of new vegan foods you need to try. Just keep an eye open for new veggies, fruits and nuts next time you go to the market. You will be amazed at how your vegan recipes are going to expand, so you won&#8217;t have to eat the same thing over and over.</p>

<p>Since we are in Italy, and since pizza is one of Phil and my favorite meals, we decided to go on a 2-day pizza-tasting extravaganza. In a lunch-dinner-lunch marathon, we enjoyed two Italian pizzas and a homemade vegan pizza recipe. It may be super delicious, but that doesn&#8217;t mean healthy vegan recipes can&#8217;t include pizza.</p>
<p>Our first tasting was at Borgo Antico, in the Piazza Santo Spirito. It was fantastic. We ordered the classic marinara pizza, which is just tomato sauce with garlic and drizzled with herb-infused olive oil. No cheese, so we didn&#8217;t even have to look like crazies ordering pizza without cheese!</p>
<p>Our next experiment was homemade pizza using a focaccia picked up at the local grocery store. Focaccia is usually made with milk powder, but they had two versions &#8211; one without dairy. I piled a mound of vegetables on top since we do love vegetables.</p>
<p>I delved into a possible side-career in silent film since there were lots of people in the common room/kitchen and I was feeling a little self-conscious talking to myself on camera. The only downside of a mound of vegetables atop focaccia is that it is fairly challenging to fit into your mouth without making a substantial mess. However, the upside of a mound of vegetables atop focaccia is that it is amazing.</p>
<p>Our third tasting was a pizza at a take-out pizzeria, the cheapest one I could find, just to see how it stacks up. We got a vegetarian pizza without cheese (and they didn&#8217;t even give me a funny look!), that was made fresh while we waited. It was put, piping hot, into a box that we took across the street to eat overlooking the river.</p>
<p>They were all great, but Phil and I both liked mine the best, probably because it was loaded with veggies.</p>
<p>Prep time: 15 min. Cooking time: 30 min.Time from start to eating: 45 min.Makes 2-3 servings.</p>
<p>Homemade Vegan Pizza Recipe Ingredients1 focaccia bread (if you can&#8217;t find one made without milk powder, try making your own or use whole wheat pitas)1-2 Tbsp tomato sauce (optional)4 small tomatoes, sliced1 Tbsp Italian Herb Mix1/2 red onion, thinly sliced1 zucchini, sliced1/2 eggplant, quartered and thinly sliced1 Tbsp olive oil (3 tsp)salt</p>
<p>Homemade Vegan Pizza Recipe Directions1. The key to making a pizza without cheese is that you have to prepare the vegetables as you would to roast them, since they don&#8217;t have the protective cover of the cheese layer. Do this by rubbing a bit of oil (for protection from the heat) and then a bit of salt (to help them soften) on the vegetables before laying them on your pizza.</p>
<p>2. If you like, spread a small amount of tomato sauce onto the focaccia bread. Lay the tomato slices to cover, and sprinkle the herbs and a bit of salt on them.</p>
<p>3. Toss the onion with a teaspoon of oil, then with a pinch of salt, and lay them on top of the tomatoes.</p>
<p>4. Next, toss the zucchini with another teaspoon of oil, then with a pinch of salt, and lay them on top of the onion.</p>
<p>5. Toss the eggplant with the last teaspoon on oil, then with a pinch of salt, and lay them on top of the zucchini. Slicing the eggplant slightly thinner than the zucchini will help them cook in the same amount of time. Put the pizza in the oven at about 350 degrees F, for about 20 minutes or until the vegetables are soft.</p>
<p>6. Serve with a simple green salad on the side, and plenty of napkins. I hope you enjoy this homemade vegan pizza recipe, the latest of my healthy vegan recipes.</p>

<p>Creating Easy Vegan Meals in modern America&#8217;s glucose drenched world can be a real task. With McDonalds on every block and snack foods at every vendor, we are tempted to splurge and indulge in our tastes. Society says, &#8220;its easy, fast, and available!&#8221; so we take it without considering the deep repercussions and effects it has on our body. But i&#8217;ve found a few resources that make even the most unlikely cheeseburger-eating-couch-potato into a lean, mean, organic machine!</p>
</p>
<p>First of all, i&#8217;m going to point out that I am a newbie to the organic vegan world. Just a month ago, i was dining at a Hardees on a frisco thickburger. Since then, i have came to realize the error of my ways. I was destroying my body! I continually gained weight and felt horrible everyday. Since 1995 organizations like Compassion Over Killing and PETA have been working to end animal abuse and promote vegetarian and vegan eating so foster healthy environments for tomorrow. I was skeptical at first, but upon closer inspection, i realized that these animals are undergoing great abuse and inhumanity including electricution to name one method KFC uses to kill their chickens. </p>
<p>I was moved by PETA&#8217;s stance on this and the information they provided. So i immediately did research on vegan dieting and easy vegan meals. Think its hard? I did too. But its quite the contrary. Its so easy once you get started! Its only been a month for me and ive lost 10 lbs! I feel better and have no desire for meat whatsoever! In fact, the very sight of it disgusts me! So ive included the links to resources that helped me get in amazing physical shape and make me so much happier. <p>There&#8217;s no need to be afraid of making vegan recipes, even for a crowd. Using a panini maker you can make a great amount of fun and tasty dishes, and you can do it fast and easy. There are a lot of options available to you, the using the sandwich press you&#8217;ll add a fun new touch to your gathering.</p>
<p>Vegan food is everything that doesn&#8217;t have any animal products of any kind (including dairy, eggs, and honey) in it. If you&#8217;re new to cooking vegan, don&#8217;t worry! While you may not have put emphasis on cooking with vegetables before, and you may be completely new to ideas like tofu, it&#8217;s all very simple and not really that different from what you&#8217;ve done before, it&#8217;s just about evaluating your ingredients before you get started cooking.</p>
<p>When you&#8217;re making panini sandwiches for a crowd cut them up into fourths (I think diagonal looks prettier, but that&#8217;s personal preference) and always remember to brush some olive oil on the outsides of the bread before grilling them. When you press a sandwich you can also use butter instead of olive oil, but remember that vegans do NOT eat butter, so you&#8217;ll want to use olive oil or a butter substitute like Earth Balance instead. </p>
<p>A really fun and simple option that does require a specialty product is a grilled cheese. You&#8217;ll need to get a vegan cheese that melts, Daiya is a major brand that works really well for this. Adding things into your sandwich will give it an extra impressive touch without much effort. You can mix in some crumbled vegan bacon, or avocado slices to take this up a step.</p>
<p>You can also saute up some vegetables (or grill them on your press) for fillings in your sandwich. Great filling combinations are mushrooms and onions with tomato slices, or zucchini, roasted red pepper, artichoke hearts, and mushrooms. For a spread you can use something like veganaise, or a vegan pesto. Most mustards are a safe condiment to use as well, and you can find many safe Italian dressings to you that really add a great touch. </p>
<p>You don&#8217;t just have to stick to sandwiches, either! You can use your press like it&#8217;s a grill and grill up some great vegetables! If you slice carrots flat they taste great grilled. This also works with asparagus, pineapple, zucchini slices, sliced red pepper, sliced eggplant, or tofu slices. Stick some toothpicks in bite size pieces of these vegetables and you&#8217;re ready to feed a crowd.</p>
<p>Using a panini maker to make vegan food for a crowd is an easy and fun way to add some life to your gathering. Keep it simple and fast to make it a stress free event. </p>

<p>Most experts and health organizations have documented the benefits of living a pure vegetarian lifestyle or vegan including permanent decrease in obesity, blood pressure, cholesterol and blood sugar, as well as the decrease of risk for heart diseases and some forms of cancer such as lungs and colon. Also, arthritis, rheumatism, allergies and asthma also reacts with vegan nutrition that means no meat, fish, poultry, dairy and eggs. A vegan lifestyle also advocates non-smoking and non-alcoholic practices. </p>
<p>All the important organic nutrients that are needed by humans such as amino acids, vitamins and minerals are produced by plants and micro living things. Animal products contain these nutrients too, but since most animals have also the same nutrient requirements of animals, we get the nutrients second-handed. The unique components of animal foods are really saturated fats and cholesterol which cannot be found in plants. </p>
<p>In switching to a vegan lifestyle, the food transformation is easy since it&#8217;s often much easier to prepare vegetables than the usual recipes we are used to. A vegan diet is very easy. You could eat only vegetables, whole grains, nuts and fruits and still meet all the body requirements for essential nutrients. However, for those people who like to cook, there are countless recipes in different books and thousand of vegan recipes available online for the cost of a small subscription fee or for free. </p>
<p>Most vegans are referred to some clinics for serum cholesterol reduction or for treatment of obesity. The reasons are direct: a vegan diet contains no significant amount of cholesterol and very low amount of saturated fat. </p>
<p>As for losing extra pounds, the vegan diet does not contain refined sugar and harmful oil. The average food recommendations are focused on fresh vegetables preferably green leafy ones, and raw in whatever you like, with calorie requirements filled by grains such as rice. </p>
<p>There are no limitations in the amount of food you can eat, and most experts encourage vegans to eat as much as you want as long as the foods are not refined and generally vegan. It is not important to measure the food servings. Our body has three sense mechanisms that can work on this. First, your stomach has the sense receptors that will send impulses to our brain when the stomach has reached the capacity. Second, our body can direct us to eat until we have enough energy to run our metabolism. Lastly, there are complex biochemical processes that can detect the amount of minerals, vitamins, or other nutrients. </p>
<p>You will not have to make big renovation to your kitchen just to suffice your new lifestyle. In reality, there are ways that will favor the whole maintenance of your kitchen. Your kitchen can be very simple because you will only need tools and utensils that will help you in preparation of vegan meals. Usually, vegan meals are very fast, easy and cheap to prepare, once you make some investments. You should purchase a rice cooker, steamer, popper and microwave oven. </p>
<p>The most important kitchen tools that you need so that you can prepare your vegan meals are the following: </p>

<p>Cooking vegan food is not that much different from cooking a meat-based diet. Many meat eaters believe that by &#8220;going veg&#8221;, you&#8217;re taking out food choice. However, it is usually the opposite &#8211; normally vegans find that they are more exposed to new, different and tasty foods which they would never have experienced had they stuck to a meat-based diet.</p>
<p>There are many simple and easy to use vegan recipes to be found in books and on the web. You can even modify meat dishes so that they are vegan-friendly! There are also many dairy and egg replacements available which assist with cooking and baking.</p>
<p>However, in order to avoid any unnecessary dangers of veganism, and just as with all diets, it is important that you receive all the necessary vitamins and minerals required for a healthy lifestyle. Vegan vitamins can also be taken to supplement your diet if you feel you are lacking.</p>
<p>Below we list some of the vitamins and minerals which new vegans may otherwise find difficult to source and replace.</p>
<p><b>Protein</b></p>
<p>Important for cellular growth and maintenance.</p>
<p>Some good sources of protein for vegans:</p>
<p>Pulses, e.g. peas, lentils, beans;Soy products, e.g. soya flour, soya milk;Seeds, e.g. sunflower seeds;Nuts, e.g. hazelnuts, cashews, Brazilian nuts and almonds;Vegetables such as seaweed, broccoli, soinchach, kale and others;Whole grains, e.g. whole-wheat flour and bread, brown rice.
<p>An average person requires approx. 1 gram of protein per kilogram of weight per day. So for example, if you weigh 70 kg then you require 70 grams of protein per day.</p>

<p><b>Vitamin B-12</b></p>
<p>Required for the production of blood cells and nerve maintenance.</p>
<p>Some good sources of vitamin B-12 for a vegan diet:</p>
<p>Chlorella;Fortified yeast extracts, e.g. nutritional yeast;Soya milks;Non-dairy margarine;Veggie burgers;Hemp based meals/ bars;Some bottled drinks;Vitamin supplements.
<p>Recommended vitamin B12 intake is 2.4 micrograms per day. Deficiencies in vitamin B12 can result in numerous medical conditions and problems such as anemia, dementia, depression, nerve damage and more.</p>

<p><b>Iron</b></p>
<p>Carries oxygen in the blood, creating energy required for the body to survive and stay healthy.</p>
<p>Some good sources of iron for vegans:</p>
<p>Seeds;Nuts;Pulses;Grains;Dried fruit;Molasses;Sea plants / green leafy vegetables;Parsley.
<p>Recommended iron intake is 8 milligrams (mg) per day.</p>
<p><b>Calcium</b></p>
<p>Required for healthy bones in adults and bone growth in children.</p>
<p>Some good sources of calcium for vegans:</p>
<p>Molasses;Seeds;Nuts;Carob;Pulses, e.g. soya beans, tofu, haricot beans, miso-fermented soy bean curd;Parsley;Dried figs;Sea plants;Grains, e.g. oatmeal;Fortified soy milk.
<p>Recommended calcium intake is 1,000 mg per day.</p>
<p><b>Zinc</b></p>
<p>Required for a healthy immune system and resistance to infection. Zinc is important for a healthy skin and helps with the healing of wounds. It is also a vital part of many enzymic reactions.</p>
<p>Some good sources of zinc for vegans:</p>
<p>Pumpkin seeds;Beans;Seeds;Nuts;Lentils;Yeast;holegrain cereals.
<p>Recommended zinc intake is 40 mg per day.</p>
<p><b>Essential Fatty Acids</b></p>
<p>Required for the body to absorb vitamins A, D, E and K. Regulates body cholesterol metabolism and maintains cell membranes.</p>
<p>Omega 6 and Omega 3 are the only 2 polyunsaturated fatty acids that your own body cannot synthesize.</p>
<p>Omega 6 (linoleic acid):</p>
<p>Vegetables;Fruits;Nuts;Grains;Seeds;Oils made from safflower, sunflower, corn, soya, evening primrose, pumpkin, wheatgerm, hemp seed.
<p>Recommended omega 6 intake is 12 (women) &#8211; 17 (men) grams per day.</p>
<p>Omega 3 (alpha-linolenic acid):</p>
<p>Green leafy vegetables;Grains;Spirulina;Flaxseeds (linseed);Mustard seeds;Pumpkin seeds;Soya bean;Walnut oil;Oils made from linseed (flaxseed), rape seed (canola), soya beans, hemp seeds.
<p>Recommended omega 3 intake is 1.1 (women) &#8211; 1.6 (men) grams per day.</p>

<p>Sometimes a non profit event you work on will actually change your lifestyle and your eating habits. A whole new vocabulary (such as eat vegan and vegan catering) has become a part of my daily life and in January, I will attempt the 21-day vegan cleanse courtesy of PCRM.</p>
<p>I think one of the effects from PCRM&#8217;s non profit event (scheduled for April 10th of 2010) is that the non profit organization improved my eating habits and got me to think about what I eat. At least once a week now, I try to eat vegan (or I will admit, more often vegetarian) and to include an increased amount of tofu vegan foods. </p>
<p>Working on this non profit event has also caused me to look to substitutes when I cook. Why not use olive oil instead of butter when sautéing? How about vegetable stock instead of chicken stock? A lot of people think that when you eat vegan, the food will be dry, tasteless and chewy which is not the case at all. </p>
<p>What I have been exposed to via PCRM are delicious tofu vegan foods at funky hip vegan restaurants that also offer vegan catering. In fact for Thanksgiving and for a couple of dinner parties, I made a vegan pumpkin pie. I have also cooked a &#8220;neatloaf&#8221; &#8211; vegan meatloaf -and quite often I whip up a walnut mushroom pate that looks like chopped liver. <p>The Environment and a Vegan Diet</p>
<p>When you eat vegan, I believe you also start to take a second look at your environment and how you can possibly decrease the amount of waste produced. A diet of tofu vegan foods puts less stress on the environment because this diet requires less manufacturing. </p>
<p>Also, consider your wardrobe. Are there certain leather accessories that you can do without or switch them to fabric products? Now more than ever, designers are looking to stylish alternatives for leather, suede and fur and creating alternative fashion statements that are fun, functional and hip. </p>
<p>Tofu Vegan Recipe</p>
<p>Below is a delicious and easy tofu vegan recipe for a walnut mushroom pate. I included this recipe in Budget Bash since it is impressive to serve yet simple to make. (Hint, I keep it in the fridge and just eat it without the crackers after working out for a good source of protein.)</p>
<p>Walnut Mushroom Pate</p>
<p>3 tablespoons olive oil</p>
<p>¾ pound fresh sliced mushrooms</p>
<p>½ onion sliced</p>
<p>2 cloves garlic, minced</p>
<p>½ pound firm tofu, mashed</p>
<p>½ cup walnuts</p>
<p>¼ teaspoon salt</p>
<p>¼ teaspoon pepper</p>
<p>Sauté the mushrooms, onion and garlic in olive oil until the onions turn soft, about 5 minutes. </p>
<p>Put the mushroom mixture and tofu in a food processor or blender and puree until smooth. Add the walnuts, salt and pepper and puree again until smooth. Chill the pate thoroughly before serving with your favorite bread or crackers. </p>

<p>I&#8217;ve been cooking vegan again and found an easy-to-make, delicious, nutritious vegan dessert recipe featuring vegan chocolate and I thought I would share it with you. This dessert is one of three simple vegan recipes that I will be writing about in the next few weeks.</p>
<p>What I loved about this vegan chocolate dessert is that it had a similar consistency and taste as regular chocolate mousse but not the same high-caloric, high-fat count as the real deal and therefore, I felt less guilty making and eating this easy vegan dessert recipe. Ingredients are as follows:</p>
<p> * 1 cup of vegan semi-sweet chocolate chips</p>
<p> * 1 cup non-dairy milk, such as soy milk or rice mike</p>
<p> * 2 12.3-oz packages of low fat silken tofu</p>
<p> * 1 teaspoon vanilla</p>
<p>Optional</p>
<p> * Vegan graham cracker pie crust</p>
<p> * Strawberries</p>
<p> * Mint garnish</p>
<p>Place the vegan chocolate chips and the non-dairy milk in a microwave-safe bowl and microwave for 1 minute so that chips melt. Take the mixture out of the microwave and let it sit and cool down.</p>
<p>Then, using a hand mixer or food processor, blend the tofu, vanilla and chocolate chip/non-dairy milk mixture until smooth. Transfer into small individual serving dishes or the graham cracker pie crust and chill for at least 2 hours.</p>
<p>Before serving, you can top your mousse with strawberries or garnish the mousse with mint leaves. Another variation to making simple vegan recipes using vegan chocolate is to add a cup of fresh bananas while you are mixing the tofu and chocolate mixture to change up the taste a bit.</p>
<p>Want to add some decor to your dessert presentation? Then place the mousse in a decorative glass or ceramic container. I used some margarita glasses that I had to add a quick and easy decorative flair to my table. For other inexpensive decor ideas check out Budget Bash.</p>
<p>Under the same heading of simple vegan recipes is the strawberry mousse I made as well last week. Again, I used readily available ingredients. 2 packages of frozen strawberries, 1 package of extra-firm silken tofu and 3 tablespoons of sugar or 2 tablespoons of Agave nectar (to substitute for the sugar).</p>
<p>Thaw the frozen strawberries and then blend them in a food processor or blender with the sugar and the tofu until smooth. Spoon the mixture into four serving dishes and refrigerate until chilled. You can also serve this dessert with fresh strawberries or another seasonal berry as a garnish. For a complete vegan dinner menu with recipes, check out pages 98 and 101 in Budget Bash.</p>
