Pasta is one of my favorite dishes. I love it all kind of ways. Pasta is very versatile and easy to prepare.

About 7 years ago I had Spaghetti Salad for the first time as a salad. From that day on I was hooked. I started making it for many of the events I cooked was asked to cook for and for special occasions. Now that I am vegan, I prepare it more often.

Enjoy this week’s free recipe.

Ingredients

1 box of whole wheat spaghetti
1 cup of red onions
1 cup of green onions
1 cup red bell peppers
3 garlic cloves chopped
1/2 cup shredded carrots
1/2 cup capers
1 cup of grated soy, rice, or almond cheese
3 tbl olive oil
2 tbl balsamic vinegar
sea salt and pepper to taste

Directions:
Cook spaghetti according to package
instructions. Rinse spaghetti once cooked and place in bowl. Add
onions, peppers, carrots, garlic, capers,and cheese. Mix. Add oil and
vinegar slowly stirring while adding. Chill for 1-2 hours for the full
flavor effect.

Serve with melba toast or whole wheat cracker.

Variations:

Add cherry or grape tomatoes, peas, or celery.
