Refried Beans

I love bean burritos. Even before reverting to a more vegan diet, I would eat bean burritos over meat filled ones.

I had a recipe for refried beans that was filled with meat fat before I got married. After saying I do, I had to learn how to adjust the recipe to make it vegan friendly.

Here is my version.

Ingredients:
3-4 cups of cooked pinto beans
2 tsp soy butter
1 tbls of coconut oil
2 tbls cilantro
juice of 1 small lime
½ cup green onions
1 tbls chili powder
3 tsp of garlic powder
Salt to taste

Directions:
In bowl mash beans. Heat a med skillet and add oil. Add beans and stir consistently for about minutes. Add seasoning and stir more. Add butter, lime cilantro, and green onions. Stir and simmer on low heat for about 10 minutes, stirring occasionally.

Eat with tortilla chips or make a burrito. Serves well as a dip.
