I love italian food! I am into the sauces and pastas, but man they can be murder on your hips. So when I became a vegan, I switched to whole wheat pasta and learned how to make a sauce from scratch. Of course I still pull the sauce off the shelves in the store for a quick fix because you will learn, I love to cook, but I don’t like to be in the kitchen all day long.

Today, I want to share my recipe for a quick and delicious spaghetti. This recipe includes Gimme Lean sausage substitute. You can read more about Gimme Lean here at Vegan Family Living by reading this Fact Sheet.

Quick and Simple Spaghetti:
Serves 6-8 people

Ingredients:
1 package Gimme Lean sausage Substitute
1 lb whole wheat spaghetti noodles
1 med bell pepper (chopped)
1 med onion (chopped)
3 pearls garlic (chopped or minced…whichever you prefer)
1 cup chopped mushroom of choice (I use criminis)
1 tbls garlic powder (more or less…depends on your preference)
1 tbls onion powder
2 tbls italian seasonings
1 8oz can tomato sauce
1 jar of pasta sauce of your choice
½ tsp black pepper
salt to taste
2 tbls olive oil
½ cup of water

Directions:
Cook pasta according to package directions. Place a med frying pan on stove and heart on low to medium heat. Add oil once pan is heated. Add Gimme Lean after about 30 seconds. Using a fork, separate the meat and cook for about 2 minutes. Add water and crumble meat with the fork (the water will help it to crumble more). Once the meat begins to crumble, add all seasoning and continue stirring. Allow to cook for about 2 - 3 minutes and add bell pepper, onion, garlic, and mushrooms. Continue to cook for about 5 minutes. Add tomato sauce, stir and let cook for 3 minutes. Add pasta sauce and simmer on low for about 10 minutes more. Serve over cooked and drained pasta with salad and garlic bread (see next recipe for a simple homemade garlic butter). Enjoy!

Variations:
Add a can of organic sloppy joe sauce or about 2 tbls of hickory bar-b-que sauce. Try fresh tomatoes, spinach or another vegetable in the speghetti. When I want my toddler to eat his spinach, I add a couple of bunches to the sauce and he never knows the difference.
