Portobello Sandwich

Per Person

Ingredients

2 slices of whole grain bread (toasted optional)

2 slices of soy or other cheese alternative

10 to 12 Baby spinach leaves washed and drained

Sliced Tomatoes (about 3 med, cut slices)

Sliced onion (as much as you desire)

1 tbsp smoke

Dijon Mustard

1 nice round piece of Portobello mushroom

1/2 tbsp coconut oil

Superbowl Treat Made with My Vegan Cheese Sauce

Nachos topped with with Yves Meatless Breakfast Patties, onions, tomatoes, olives, and green chilis

Make this cheese sauce

Ingredients:

3 cups of soy or other vegan alternative milk

2 tbsp vegan butter

2 tbsp nutritional yeast

1 tbsp brewer yeast 1 tsp liquid smoke(optional - I wanted a smoked cheese taste and so I added smoke)

2 tbsp garlic powder

Ener-g Egg Replacer equivalent of 2 eggs

1/2 tsp tapioca starch

sea salt to taste




These burritos that I made also have refried beans in them. You can add more ingredients if you choose.

Ingredients

1 red bell pepper, sliced
1 green bell pepper, sliced
3 cloves garlic minced or chopped
1 medium white onion
1 pk white button mushrooms
1 8 oz can tomato paste
1 tbsp mole
1 tbsp chili powder
1/2 tsp sea salt
2 cups black or brown rice
2 tbsp coconut oil
12 flour tortillas

Deep Fry Method

Ingredients

1 package of Morning Star Chicken Starters

1 tsp sea salt
1 tsp onion powder
1 tsp garlic powder
1 1/2 cups flour
1/4 cup nutritional yeast (optional)
2 tbsp baking powder
1/2 cup soy or other vegan alternative milk
1 cup oil for frying - You can bake by lightly dipping in oil or spraying and placing on baking sheet

Directions

Heat oil in deep fryer, pan, or pot. Do not heat oil on too high heat because your chicken pieces may burn. A medium to high heat is fine.


My momma’s recipe with a vegan flair.

Ingredients
4 med. Sweet Potatoes, peeled and boiled (baking them makes your pie even yummier)
1 cup organic natural sugar
Ener-G egg replacer (equivalent of 2 eggs)
1/4 cup soy butter
1/2 cup soy milk
1 small banana, mashed
2 tbsp. flour
1/2 tsp. baking powder
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp nutmeg
2 Whole Wheat Pie shells, unbaked (9 inch)

Directions
In a large bowl, combine all the ingredients except the pie shell and mix thoroughly, using a mixer or blender to get the fluffiest consistency. Transfer the mixture to the pie shell. Bake the pie at 350 for 45 minutes or until light brown.
