Black Beans with Green Chilis and Tomatoes
Written by LaTara Ham-Ying on August 26, 2007 at August 26th, 2007
Black beans are delicious in salads, salsa, with a little coconut milk with basil and thyme, or just on their own with a little seasoning.
One day while I was just seeing what I could add with the tacos I was cooking I remembered that we had a few cans of black beans. So what did I do….you got it! I made my own recipe using simple ingredients.
This meal took me less than 15 minutes to prepare.
Ingredients
2 cans black beans (drained)
1 small can green chilis
2 tbsp chili powder
1 tbsp Mexican oregano
2 tsp cumin
2 cloves garlic diced
1 tomato diced or chopped
1 tbsp coconut oil
Directions
Heat pan and add coconut oil. Add garlic and saut? for 2 minutes. Add Black Beans, seasonings, and tomatoes and cook for an additional 5 minutes on medium heat. Turn heat off and add green chilies.
Serve with brown rice, as a side with tacos or burritos, or just enjoy this dish a la carte.
