We received a comment from a woman wanting to know what Gimme Lean and TVP are. This fact sheet will answer that.
Gimme Lean
Gimme Lean is a FAT FREE, no cholesterol replacement for sausage. I have made meatloaf, meatballs, spaghetti, chili, and a number of dishes. Add a little maple syrup, sage, cayenne pepper, and magi to it and it makes an awesome breakfast sandwich.
It is made by a company called Lightlife and they have a whole line of products including chicken strips and bacon.
Interesting Facts: One pack of Gimme Lean makes 3 to 4 burgers.

Ingredients
Made from water, soy protein concentrate, tapioca starch, soy sauce (water, soybeans, wheat, salt), soy protein isolate, wheat gluten, malt extract, evaporated cane juice, beet powder, spices, natural flavors (from vegetable sources), vegetable gum. No nitrites. No MSG.
Useful Tips:
1. Use a little olive of coconut oil when you cook it.
2. Taste it before you cook it. Because it is a soy product, you can take taste to see if it needs something more. No salmonella in this stuff….just really good taste.
3. Go minimum on the salt. It already has a high enough sodiuim count.
4. Use a fork when you cook for easy crumbling.
TVP(Textured Vegetable Protein)
Textured vegetable protein is a food product made from soybeans. It is produced from soy flour after the soybean oil has been extracted, then cooked under pressure, extruded, and dried. It does have some fat, but the nutritional value far outweighs that. I make burritos, tacos, spaghetti, casseroles, and more.
Interesting Fact: Did you know that imitation bacon bits is really a form of TVP?
Nutritional Facts:
A 43-gram serving of TVP contains 120 calories and 21 grams of protein and hardly any fat.

Useful Tips
1. To rehydrate, add 3/4 to 1 cup (180 to 250mL) of boiling water to 1 cup of TVP and let it stand for 10 minutes or until the water is absorbed.
2. Some varities of TVP contain salt, flavorings, and other additives. Please read the labels before purchasing.
3. Dehyrdrated tvp has a shelf life of 6 months to a year if stored in a airtight container.
4. Rehydrated tvp can be stored in the refrigerator and used withint 5 days.
5. TVP is easy to disguise for your family. You can marinate it in a number of ways.

[...] One of my favorite bean dishes is bar-b-qued baked beans. My sister-in-law makes hers with ground turkey and people request them so much that she says she gets tired of cooking them. Of course once I married my husband I had to find an alternative to the gobble gobble. Oh, the wonders of TVP. You can read more about TVP by reading this Fact Sheet. [...]

This is great. I just made a recipe with TVP (I had never used it before). I didn’t know you were supposed to rehydrate it:-) Well, you can imagine how dry my burgers were!
Thanks for the information. You’re doing a great job!
