This week’s vegan quick meal is one of my favorites. I love, just absolutely love, Mexican food; and the more authentic the better. So I want to share a dish I create that hardly ever sees a leftover day.

Black Bean and Corn Tacos are delicious and so healthy. Then kids will love them and you will love the quick clean up!

Ingredients

1 16 oz can black beans

1/2 10 oz bag frozen corn

1 can green chilies

3 tsp chili powder

1 tbsp garlic powder

1 small can tomato sauce

People are always asking for simple meal tip ideas. Quick ways to create healthy meals.
Easy enough is my philosophy!

This month over at Family Food Network, I wrote about this very subject. So instead of reiterating it here, jump over to the site and read it:

I just read another story about a mother who was given 30 years for starving her children. She blamed it on the children being on a strict vegan diet. Read the story here:

So here I am again wondering when will people get it….It is not the vegan diet that starves a child. It is the parents and their choices!

As parents we have a responsibility to care for our children in the best way possible. It is our duty to make sure our children are clothed, feed, and sheltered. It is our duty to make sure that they receive all the things they need for a healthier life.

I want to introduce a new category. Each week I will introduce a Vegan Quick Meal. This meal can be created with about 5-7 ingredients (not including cooking oil that may be used) and will take less than 30 minutes to cook.

This will help out those of us with a busy schedule and kids who want it right away. Or if you are single and hate to shop for a lot of groceries, then this is the spot for you.

This week’s Quick Fix was one that I pulled together the other day when we were all very hungry from a day of errand running.

I was tagged by Carrie
because she wants to know the meaning of my unusual name. Well here it is.

My name is: LaTara is a hard one to define, but I usually just go with “Tara” to discover its meaning. I was named by my sister who gave me the name “LaTara Venise”: LaTara was a little girl she played with and “Venise” is a derivative of my sister’s middle name “Denise” However today I did actually find LaTara.
