Black beans are delicious in salads, salsa, with a little coconut milk with basil and thyme, or just on their own with a little seasoning.

One day while I was just seeing what I could add with the tacos I was cooking I remembered that we had a few cans of black beans. So what did I do….you got it! I made my own recipe using simple ingredients.

This meal took me less than 15 minutes to prepare.

Ingredients

2 cans black beans (drained)

1 small can green chilis

2 tbsp chili powder




If your kids love the boxed stuff, they will love this one!
Ingredients
2 cups of macaroni
1 1/2 cups vegan milk alternative
1 cup soy chesse of choice (optional)
3 tbsp nutritional yeast
2 tbsp soy butter
sea salt to taste

Directions

Cook macaroni according to instructions on box. Drain and rinse with hot water.

In pot mix pasta, butter, and milk. Continue stirring and add cheese and nutritional yeast. Add salt to taste. Heat on low until the cheese beings to melt and mixture thickens. You can add more milk is necessary.


Udon Noodles is a Japanese noodle that you can find in the refrigerator section of most Asian markets. Packaged similarly to Top Ramen with seasoning packets, these noodles have a fresher taste because they are not dehyrated. Udon noodles usually come with three packages in each bag.

In our home we throw out the seasoning packets and make our own homemade seasoning mix.

Ingredients

2 packages of udon noodles

2 tbsp sesame or chili oil

1 tbsp magi

*6 Chinese mushrooms re-hydrated

1 stalk celery chopped

1 small onion sliced


I just created this recipe today! I had a can of white hominy in the pantry and since I enjoy it so much I just had to do something with it. So I thought about a recipe that my niece made while I was in Los Angeles and the recipe began to formulate.Now this recipe has more than 7 ingredients, but it is still ready in less than 30 minutes.

Ingredients

1 32 oz Can of White hominy

1 bag of frozen corn

2 cups of brown rice (I used left over rice, so if you have some left over….throw it in)
