Seafood Salad made with Tuno

I love crab, but guess what? So do my bad cholesterol levels. My husband and I created this great seafood salad that is all vegan. A little crab seasoning really makes the difference in this dish.
Serves 10-12 people
Ingredients:
1 package frozen tuno (thawed)
1 1/2 block of soft Chinese or Japanese tofu
1/2 cup of soy milk
2-3 cups uncooked whole wheat pasta (macaroni, rotini, or shells)
2 tsp garlic
2 tsp onion powder
3 tsp paprika
2 tbls crab seasoning (any seafood seasoning should be fine)
1 tbls red wine vinaigrette
1tbls lemon juice
1/2 cup chopped celery
1/2 cup green onions
1/2 cup red onions
1 tsp celery seeds
1 tsp thyme
1 tsp basil
1 tsp marjoram
Directions:
Cook pasta according to package directions, drain and rinse in cold water. Place tofu and milk in food processor cover and start. Add vinaigrette, lemon juice, and 1 tbls crab seasoning. Process until smooth. In a bowl add tuno, remaining ingredients and mix well. Chill for one hour. Eat with wasa crackers, melba toast, or unsalted saltines.
Variations: add some shredded soy cheese, walnuts, or replace the red wine vinaigrette with garlic infused balsamic vinegar.
You can purchase Tuno in most health food stores.
